I don't make any bones about the fact that I like leftovers.  I just can't stand the thought of spending good money on a great meal, just to let the leftovers sit in the fridge and rot.  I certainly understand that you can get tired of eating the same thing over and over again, day in and day out...but there's just no reason why you can't reinvent the wheel.  Put a different spin on it...use it a different way...change the flavor..whatever you want. 

That's exactly what I did here.  We had a terrific roast lamb dinner on Sunday night...with lots of lamb, green beans, carrots, baby fingerling potatoes and even fresh baked buns on hand.  Rather than have another viewing of the exact same meal, I thought I'd change it up.  Still quick, still easy...and no more work...

I made a simple Butter Chicken sauce out of a package; cut up my leftovers to bitesized pieces, and threw them in.  Sliced up the buns and served them on the side to sop up the new gravy.

Ta Daaaa!
