Frugal or there a difference?

I don’t know how many times I’ve got in my head to use up one of my packaged sauces (which I love, with a few additions), only to find that at least half of it ends up sitting in the fridge, only to get tossed out days later.  I’m speaking at the moment of my béarnaise sauce that I’ve whipped up (with some added vinegar, tarragon, cayenne and lemon) to serve with my steak and garlic shrimp.  There’s just two of us for dinner, so I know that there’ll be leftovers….too much to add to my eggs tomorrow morning.  Epiphany!  Cut the ingredients in half and save it for another time!! Advantages: no waste and I don’t have to add Bearnaise mix to my grocery list just yet!
